Adapting Recipes For Convection Baking

As a general rule, reduce the temperature by

convection baking. For more specific instructions,
follow the guidelines in the Convection Cookbook.

Preheating is not necessary with foods having a bake
time of over 15 minutes.

Check foods

doneness at the minimum

suggested cooking time.

Use pan size recommended in

recipe.

For more information on adapting recipes, see the
Convection Cookbook.

Multi-Shelf Baking

Because heated air is circulated evenly throughout the

oven, foods can be baked with excellent results on two
or three shelves at a time. Multi-shelf baking may increase
cook times slightly for some foods but

overall result

is

saved. Cookies, biscuits, and

give

very good results with multi-shelf baking.

When baking on 3
shelves,
divide the oven
into thirds by placing the

shelf in the third

(C) shelf position and
straight shelves in first
(A) and fourth (D) shelf
position.

For 2-shelf baking, place the

shelf in the

bottom (A) shelf position.

the straight shelf in

the third (C) shelf position.

CAUTION: When you are using the offset shelf in
the lowest position (A), you will need to

caution

when pulling the shelf out. We recommend that you
pull the shelf out several inches and then, using two
pot holders,

the

out by

the sides

it. The offset shelf is low and you could be burned if
you place your hand in the middle the shelf and
pull

the

out.

NOTE: When convection baking with only one shelf,
follow the shelf positions recommended in Oven

Shelves in the Regular Baking section.
