Chocolate Mud Cake

1 tablespoon white vinegar
1 cup milk
1 cup plain flour
1 cup self-raising flour
1 cup caster sugar
¾ cup cocoa
½ teaspoon bicarbonate of soda
125g butter or margarine
3 x 60g eggs

1.

Use the mixing blade on MED speed.

2.

Add vinegar to milk and allow to
stand for 5 minutes.

3.

Place flour, sugar, cocoa and
bicarbonate of soda into the
processing bowl and process until
combined. Add melted butter, egg
and milk and process until smooth.

4.

Pour mixture into a greased 20cm ring
and bake in a moderate oven (180ºC)
for 40 – 45 minutes or until cooked.

Mango Smoothie

2 mangoes, peeled and sliced
1½ cups plain yoghurt
1 cup orange juice

1.

Place mangoes, yoghurt and orange
juice into the blender jug. Blend
on MAX speed until smooth. Serve
immediately.
