4.3

Sharpen Knife

1. Swing the Product Grip to the storing/non-use position and lock it in place.

2. Before mounting the sharpener assembly, adjust the index control knob to #11.

3. Pull the carriage tray handle to the home position as shown in Figure 4-10.

4. Mount the sharpener assembly by inserting the alignment pins into the two slots at the top of the gauge

plate this will position the wheel stones on either side of the knife.

5. Tighten the black wing nut knob to secure the sharpener assembly.

The wheel stones should not touch the knife. If there is contact with the knife, re-adjust the index control
knob.

6. Press the green start button to turn ON the slicer.

7. Slowly lift the sharpener lever half way for 2 to 3 seconds with the upper wheel stone touching the knife

(sharpening) and release.

8. Fully lift the sharpener lever for 5 to 6 seconds with both wheel stones touching the knife (sharpening/

deburring) and release.

9. Press the red stop button to turn OFF the slicer.

10. Loosen the black wing nut knob and carefully remove the sharpener assembly.

11. Close the index control knob.

12. Clean the sharpening waste away from the slicer.

13. Sanitize the machine before placing the slicer back to normal operation.
