3.0 INSTALLATION (Continued)

PLUMBING CONNECTIONS

WARNING: Plumbing connections must comply with applicable
sanitary, safety and plumbing codes.

Connect the water supply line to the 3/8" compression tube inlet. The 3/8" water line supplies
water to the cavity to generate steam or the user can manually supply water by filling thr

ough the

cavity door. A manual shutoff valve must be provided convenient to the steamer.

DRAIN CONNECTIONS

The drain connection is a 3/8-NPT female connection. Do not make any solid connections to
drains or others.

CAUTION: In order to avoid any back pressure in the steamer, do
not connect solidly to any drain connection.

WATER CONDITION

For best results Crown recommends that the water supply meet the following specification:

Hardness:

Less than 2 grains or 35 ppm.

Total Dissolved Solids (TDS): Less than 60 ppm.
PH Factor:

7.0 to 7.5

This degree of hardness can easily be obtained with the use of a properly maintained water
softener.

VENT HOOD

Some local codes may require the steamer to be located under an exhaust hood. It is
recommended that this steamer be located under an exhaust hood to remove excess steam
during cooking operations.

Information on the construction and installation of ventilating hood may be obtained from the
standard for “Vapor Removal for Cooking Equipment”, NFPA No. 96 (Latest Edition).
