was left between the sample surface and the base of the probe. This was
left to ensure that a break between probe:sample interface was made and
that true adhesiveness characteristics could be calculated.

NOTE: Samples were tested with original containers as supplied. Use of
different dimension holding vessels will change results obtained, there-
fore, operators must be consistent with test configuration imposed.

DISCUSSION:

Once the 4g trigger is attained the forces continue to increase continuously
until a surface fracture occurs and the modulus changes to a less steep
gradient and forces plateau.

The low fat sample appears much softer than the fat free, having increased
flow over the plunger with a visually less grainy and more glossy fluid
appearance. The softer set is characterized by the lower forces and areas
of work measured as well as the shallower gradient of slope. The softer
set is also characterized by the failure to form sample fracture and the
absence of peaks within the curve.

The fat free sample has a much steeper initial gradient and subsequently
higher values for all measured parameters. Its grainy set structure is
characterized by the large number of peaks attained within the curve,
while the increased viscosity or spoonability is shown within the negative
portion of the curve.
