King Kooker® beef Fajitas

Use your outdoor cooker and rice cooker/fry pan to whip up delicious cooked beef to delight your guests.

Mix the dry ingredients in a small mixing bowl. Pour the olive oil and lime juice into a 2 or 3 inch (5 or 7

cm) deep glass rectangular bowl suitable for marinating the steak strips. Pour and stir the dry seasoning

mixture into the liquid oil/juice mixture. Immerse the strips of meat into the liquid seasoning mixture to coat

both sides, and allow the meat to remain marinating in the liquid for at least one hour, or overnight in the

refrigerator, if desired.

Place a thin layer of olive oil into the frying pan. Light the outdoor cooker and place the strips of beef into

the oil. Fry lightly on all sides, turning frequently. Continue frying until browned on all sides to the desired

doneness. Remove from the pan.

Add a small amount of additional olive oil to the fry pan to fry the vegetables. Place onions and peppers in

the pan and sauté until cooked to the desired doneness.

Serve the cooked meat and vegetables with the steamed tortillas. Let guests design their own fajitas by

wrapping the meat, vegetables and their favorite condiments within a warm tortilla. Delicious!

steaming tortillas in the steaming pot:

Steam the tortillas by placing 2 ½” (6.5 cm) of water into the 16 qt. (15 liter) pot and place the steamer rack

onto the ridge inside. Light the cooker and bring the water to a boil. Remove the flour tortillas from the

package and wrap the entire stack of tortillas in a large piece of aluminum foil. Place the foil wrapped tortilla

package on the steamer rack to heat. Cover the pot with the lid and steam for about 5 to 10 minutes. Turn

off the cooker and carefully remove the foil wrapped package from the pot using tongs. Allow to cool for a

few minutes. Open the foil and transfer to a covered dish for serving.

2 tablespoons onion powder

2 tablespoons garlic powder

2 tablespoons ground cumin

1 teaspoon salt

1 teaspoon ground black pepper

1 cup olive oil

2 tablespoons lime juice (bottled or freshly squeezed)

3 pounds beef round steaks, sliced into 4” x ½” pieces

1 or 2 onions sliced into strips

1 or 2 green peppers seeded and sliced into strips
