Citrus and Coriander Dressing

cup orange juice, freshly squeezed

2 tablespoons lime juice
3 tablespoons sweet Thai chilli sauce
2 tablespoons coriander leaves
2 tablespoons white wine vinegar
2 tablespoons olive oil

1.

Place all ingredients in the mixing jug,
process until smooth using stick mix.

2.

Serve over salad leaves, grilled
chicken or fish.

Cucumber and Mint Raita

600ml Greek yogurt
2 Lebanese cucumbers, seeded

and chopped
1 teaspoon sea salt
1 teaspoon ground cumin

cup mint leaves

freshly ground pepper

1.

Place all ingredients in a sufficiently
large Blending Jug, process until
smooth using stick mix.

2.

Serve as an accompaniment
with curries.
