5.3 Sharpening Knife

Wear protective gloves before doing any sharpening operations.

1. Prior to using the sharpener, clean the knife to prevent transfering food particles to the sharpening stones.
2. Place the shifting lever in manual position.
3. The carriage tray must be pulled to the front “start” position with the product grip in the stored and locked

position.

4. Place the thickness index knob setting at the hash mark between the 8 and 10 position.
5. Install the sharpener on the gauge plate.
6. Slide the alignment pins of the sharpener into the two slots at the top of the gauge plate and secure it with the

wing nut.

7. Press the start position on the green touch panel.
8. While the knife is turning (slicer is running), turn the thickness index knob clockwise so that the sharpening

stone is against the knife for 6-8 seconds.

9. Turn the thickness index knob counter-clockwise back to the mark between the 8 and 10 positions.
10.While the knife is turning (slicer is running), turn the thickness index knob counter-clockwise so that the

de-burning stone is against the knife for 6-8 seconds.

11.Return the thickness index knob setting at the hash mark between the 8 and 10 positions.
12.Press the stop position on the red touch panel.

Turn off the slicer power before removing the sharpener from the slicer.

13.Loosen the wing nut securing the sharpener assembly and remove by pulling upward.
14.Close the thickness index knob by turning clockwise.
15.Clean the slicer.
16.The slicer is sharpened and ready for use.

Grease the knife after every sharpening to protect the blade.
