Beef Sirloin, cut in 1’ cubes

20 lbs

Onions, sliced

2 lbs

Water, hot

1 gal

Mushrooms, fresh sliced

2 lbs

Salt

2 tbsp

Pepper

1 tbsp

Flour

1 lb

Water, cold

as needed to make a roux

Sherry

1 cup

Sour Cream

2 qts

1.

Brown beef and onions at 325°F. Add water to cover and cook until meat is almost done
(approx. 1 hour).

2.

Add mushrooms, salt and pepper.

3.

Stir in flour which has been dissolved in cold water.

4.

When mixture thickens, add sherry and sour cream, turn off pan.

5.

Serve over rice or noodles.
