Fillets of Sole (5 oz fillets)

Salt

1/2 cup

Ground Black Pepper

2 tbsp

Eggs, Lightly beaten

2 doz

Milk

1 qt

Dry Bread crumbs

1 gal

Butter

3 lbs 2 oz

Oil

3 cups

Lemon Juice

to taste

1.

Season fish fillets with salt and pepper.

2.

Combine egg and milk, dip fish into the mixture.

3.

Heat butter and oil in braising pan at 350°F.

4.

Coat fish fillets with bread crumbs.

5.

Pan fry in shortening over moderate heat, turning carefully to brown on both sides,

until fish is flaky.

6.

Drain and serve immediately.
