Flour, all purpose

4 lbs

Vegetable Shortening

4 gal

Salt

1/3 cup

Pepper

2 tbsp

Paprika

1 tbsp

Evaporated Milk

1 cup

Preheat braising pan 4 minutes at 250°F.

Wash and drain chicken.

3.

Combine beaten eggs and milk.

4.

Coat chicken parts with egg mixture.

5.

Add shortening to the braising pan and heat to 375°F.

6.

Season flour with salt, pepper and paprika. Dip each piece of chicken into seasoned flour
and shake off excess.

Place chicken in hot fat. Fry 15 minutes, flip and continue until desired brownness is
obtained.
