Draining shortening with the heating
element on may cause fire, serious
injury, or even death.
• Before attempting to remove the
conveyor assembly from the fryer,
always allow the shortening to cool and
drain the shortening out of the fryer. If
you do not, shortening may splash on
you and on the floor, creating a safety
hazard. If the shortening is hot, you may
suffer serious burns.
