GINGER GLAZED CARROTS

Makes 6 cups, twelve ½-cup servings

slicing disc, adjusted to 5mm, into the large work bowl

and slice the carrots. Melt the butter in a lar

ge skillet

placed over medium heat. Once butter is melted, add

the ginger and sauté until soft, about 4 minutes. Add

the carrots, salt, pepper

, syrup and zest. Sauté for about

25 minutes, stirring carrots occasionally during cooking

time. Once carrots ar

e tender, r

emove with a slotted

spoon. Continue to reduce liquid until it is a glaze-like

consistency, about 3 to 5 minutes. Drizzle glaze over

carrots and serve.
