before steaming.

Make certain the product is generally
uniform in size.

Portion vegetables into pans and
place in preheated oven.

Season vegetables after steaming.

These procedures are based on the use
of perforated pans which reduce the
time necessary to steam the product.
The use of non-perforated pans will
require an increase in steaming time.
