Herbs (except chives)

Amount: 10 g-50 g / 0.35 oz-1.75 oz

S Put the herbs into the bowl (dry).

Onions, garlic

Amount: from 1 onion, quartered, up to 300 g / 10.5 oz

from 1 clove of garlic up to 300 g / 10.5 oz

S Process the onion / garlic until it has been chopped to the

required size.

Vegetables and potatoes, raw

(for soups, sauces, stuffing)

Amount: 50 g / 1.75 oz to 300 g / 10.5 oz

S Cut the vegetables into large pieces and put into the bowl.

Hard cheese (e.g. Parmesan)

Amount: 10 g / 0.35 oz to 200 g / 7 oz

S Dice the cheese and process until it has been chopped to the

required size.

Breadcrumbs

Amount: 1 to 4 dry bread rolls

S Cut the bread roll into four and process until it has been

chopped to the required size.

Meat, liver

(for mince, steak tartare, etc.)

Amount: 10 g / 0.35 oz to 500 g / 1 lb 2 oz

S Remove bones, gristle, skin and sinew. Dice the meat.

Making sausage meat, stuffing and pâté:

S Put meat (beef, pork, veal, poultry, or even fish, etc.) together

with other ingredients and spices into the bowl and mix into a

dough.

Yeast dough

Max. 500 g / 1 lb 2 oz flour

25 g / 1 oz yeast or 1 packet of dried yeast

225 ml / 8 fl oz lukewarm milk

1 egg

1 pinch of salt

80 g / 3 oz sugar

60 g / 2 oz fat (lukewarm)

Peel of ½ lemon (or lemon zest)

Ingredients should be at the same temperature.

When the dough has a smooth appearance, place in a warm

location.
