Preheat braising pan for 4 - 5 minutes at 250°F.

2.

Heat oil in braising pan to 375°F.

3.

Sift dry ingredients together.

4.

Add eggs, milk and fat and blend well.

5.

Add corn (or fruit) to mixture and blend well.

6.

Using a #40 or #24 scoop, drop into hot fat. Brown on both sides.

7.

Drain on absorbent paper.

8.

Serve hot with maple syrup.
