B. Steaming
The Chinese have long established traditions of steam cooking. This has now become
popular in Europe.
A half moon wire ( ref.9901) can be delivered with the wok (ref. 2932E). This item can
be used for steaming. It is necessary to close the wok with the special lid ( ref. 7532),
the steam escape must be opened.
A large wire steaming rack ( ref. 9906)can also be purchased. Of course it is possible to
use any heat resisting product. All the accessories of the wok 32cm- 12.5” ( and 36 cm
– 14.2”) can be used, eventually adapted to the diameter.

C. Deep- frying
The wok is ideal for deep frying all kind of small quantities of food : fish, meat, croquets,
etc....and also for pop corn.
The half moon insert (ref. 9901 for the woks of 32 cm – 12.5” or ref. 9909 for the
woks of 36 cm – 14.2” can be used to let the oil drain, for example when you prepare
tempura.

D. Braising
Due to its size the wok can be used to prepare large pieces of meat.

E. Cooking
Most of the cooking can be done in the wok.
The Chinese often use the wok to prepare soups.

4. THE “DEMEYERE” WOK AND ACCESSORIES

This wok has been developed with the special collaboration of chefs from the Far East.
What are the main benefits?
1. The use of a laminated material till the edge with a heat conducting core(aluminium)

and stainless steel inside and outside : this is the best combination for a good wok.
It gets very hot at the centre and cooler towards the outside. The result is even hea-
ting and the oil will not burn. There is a minimal use of energy and the wok will
keep warm for relatively long time if the lid is kept closed.

2. The lid is designed to fit on the inside of the wok, so a perfect lid closure is

possible,even with the steamer/drainer inside.

3. The high lid ( ref.7532 for the wok of 32 cm – 12.5”) has a steam escape regulator.
4. The half moon insert (ref.9901 for wok 32 cm – 12.5”) is perfect for draining after

deep frying. Ex. When tempura is made (ref. 9909 for the wok 2936ZD) van 32 cm 5.
The outside and the inside of the wok are made of 18/10 stainless steel, treated with
SILVINOX ®. This more noble stainless steel is better resistant against decoloration.
It is also more adapted to the use of the dishwasher.

7. The wok is available in different models, always made with the 7- layer material till

the edge and with a thickness of 2,3 mm – 0.01”.
