1 cup rye flour

cup whole wheat flour

cup all-purpose flour

1 teaspoon salt

1 cup water

1-2 tablespoons flour for kneading

Preheat the Press.

Combine flours and salt.

Stir the water into the flour mixture until the
dough forms a ball.

Turn out onto a lightly-floured board and knead
for 2 minutes. The dough should be slightly firm,

not sticky.

With floured hands, form the dough into 15
equal size balls. Allow to stand 5 minutes.

Press quickly 1 or 2 times until the dough

forms a

inch round.

Score both sides of the dough rounds in a

tic-tac-toe pattern or prick the surface of both
sides of each with a fork. (Do not cut through
the dough when scoring.) This is so the edges
do not curl when baking and to allow the heat
to penetrate the dense dough.

Place the dough on a baking sheet and bake in
a preheated 400°F oven for 7 minutes per side.

Makes: 15 large crackers
